Betty Crocker Gluten free Cake mix-Devil's food

I think it is perhaps easier to make a better chocolate cake gluten free then it is white cake. I think it has to do with the fact they chocolate cakes use less flour in favor of coco powder. I even had a few recipes for chocolate cake that require no four at all.

 
Anyways back to our project this week

Our second contestant
in the chocolate cake categories is :

Betty Crocker Gluten free Cake mix-Devil's food

Cupcakes again.
Dense, spongy.
A little dry
Held up well.
Frosted nicely

8 out of 10 tasters though they were just as good as any other chocolate cake.

One commented that a little raspberry filling would go a long way…I might try that next time

Kinnikinnick Foods Gluten free White cake mix

I'm testing cake mixes again.
Last time I was cake mix testing was for my wedding cake.
This time it is for my baby shower cake.

Our first contestant
in the white cake categories is :
Kinnikinnick Foods Gluten free White cake mix

Easy to make.
Not all that "white" if you care about that.
They crowned nicely when baking.
Held up when transporting.
Slightly spongy.
A little dry.

The were crumbly, but not too bad.
You could tare the top off, and still hold on to the other half. But there were crumbs EVERY where when you tried to slice it.
The "skin" it developed when baking
was good for frosting. But the inside was not, too crummy.
I would not make this into a sheet cake, the slicing would just tear it apart.
And I would not try to put filling in it.
CupCakes are the way to go with this mix!

Brownie Compair

Subject, Brownie Mix
Contestant 1: Betty Crocker
Contestant 2: Gluten free pantry

I Made a box of each, which made a 8X8 pan of each. (the brownies were swirled with melted peanut butter before baking, if you wonder about the color)
I took them to work, for our by-monthly meeting.

8 out of 10 said they tasted no real difference.
The 2 that claimed to taste something both thought that the Betty  was "more chocolaty" or "richer"


I actually made a 9X13 of regular brownies too, in case there was not enough GF to go around, and 6 out of 10 though the GF Brownies were better. Chewier and moister then the Regular Plain Ordinary gluten filled brownies.

Hawaiian Hay stack

HAY for the Pacific foods Gluten free Cream of condensed soup!!!
And in celebration, the number one "cream of __" recipe that I missed the most!

Hawaiian Hay stacks:
1 Box Pacific foods Cream of Chicken soup.
1/4 Cup milk
1 Can chicken
2 Cups cooked rice
1 Cup frozen pease
1 Cup shredded cheese
1 small can Pineapple tidbits,
1 small can mandarin oranges
1/2 cup shredded coconut
1/4 cup almond slices

In a small bowl, mix soup, milk and chicken.
Spray pan with oil.
Place cooked rice in bottom of pan.
Layer with Chicken soup mixture, pease
half of Cheese
Fruit, and nuts
Remaining cheese
Bake at 3275 just until cheese is milted and coconut is toasted
About 20 min...

gluten free mama scone MIx-2

I gave the scone mix a second try;

This time I used Coconut cream instead of regular cream, and shredded sweetened coconut.
This also made then scones Dairy free.
I spread the dough on a baking sheet only an inch high in the center, and did not slice it before I cooked it.
I think cooked it for a shorter time.
It turned out better then last time

I cooked then for a little bit shorter time.
I think it turned out better then before.

Garlic Jim's

Our local Garlic Jim's has a gluten free Pizza crust option.

Regular Large: $19.00>>>Gluten free Large: $22.00
Not too bad of a mark up on price.

I got the fancy Hawaiian. Toasted almonds in addition to the Canadian bacon and pineapple. Not enough cheese.
About a year ago we ordered this and the GF crust was burnt.
This time it was perfect.
I had half the pizza for lunch and the other half for dinner.

Would probibly order again.

Anyone else ever wondered why it's Canadian bacon on the Hawaiian pizza...

Arico Almond Cranberry Cookies-Gluten free

My hubby's grandmother got these for me.
Moist and Chewy.
Dairy free, but with 15% of your daily calcium per serving. Which is 2 cookies. But at only 50 calories per cookie.
And the cookies were not too small.
Smaller then I bake at home, but not tinny.

Funny after taste. Maybe the Chicory extract...Sort of left a coating on my teeth, like when you eat spinach.

Probably not my favorite, but I would not turn down a free one.

Hot pad

I think monograms are cool.
I must right?
But I can understand that not EVERYONE does.
SO I think everyone we know will get one monogrammed thing. And that is it, unless they SPECIFICALLY request more.
This is for my sister in law. I noticed her hot pads we all in sad shape. So I got these black ones with pink trim, because she likes pink.
I un-sewed the pocket cover, monogrammed it and sewed it back together.

that was very very difficult. The trim appears to have shrunk while i was embroidering; so it puckered badly when reassembled.
I had to put soooo many pins in it and  it was a nightmare. I finally hand sew it back together so it would hold still then put it in the machine to sew it all they way around again.
So I did not monogram the mitt like I had planed.
Perhaps I should get pattern to make my own hot pads, as that would have been easier...

Rice works-Gluten free Brown rice crisp


Hubby got these out of the vending machine a the hospital during a brake of our childbirth classes.
They said "Gluten free" across the top, so he could not stop himself.
They were not bad.
180 calorie for the whole 1.3OZ bag.
The Parmesan tomato flavor reminded me of a mild dorito.
The flavor was light and they were "crunchy"
But rater fragile. Most of the bag was broken into small pieces. And I do not think you could use then to dip into anything, they would just crumble.
I would say that overall not a bad snack ship/cracker.

Baby Bear

I got this top at the thrift store. $1.99
I thought it would be perfect to put something cute on.
SO I embroidered this Bear.

The bear is from the Anita Gooddesign Stuffed animals collection.
I think it is cute.
Originally I got this design set for the Lion and tiger and Giraffe. But now that My nursery is woodland creature themed, I might need a another set of animals. This one only has Bear, raccoon and bunny.
I need fox, hedgehog and owl...
This might be the outfit that baby comes home form the hospital in, but we will see if I can make cuter before then.
