Lucy's Cookies


Not impressed.
It's a very crispy cookie.

They brand was on sale so we tried the chocolate chip, "oat" meal and Sugar.

With my eyes closed I could not tell the differences between the three flavors.

When I left the open packaged out over night they softened up a little, and that was an improvement in my opinion.

Likely not get them again.

GF Cereal

I have been eating several variates of cereal for years without then being certifies gluten free.
Over a decade ago, then I was first diagnosed, I called all the manufacturers and got actually ingredient lists that divulged the "modified food starch" and "natural flavoring" so I have loved my Chex,  and Cocoa Pebbles for years, with no problem.
Now that boxes say "Gluten Free" in big letters right on them!
Plus now the pre-made "treats" are GF too!
Woo Hoo!
Hope that does not drive the price up!

I Have also done my own research and was told by manufacturers that the following cereals do not contain Gluten, but can not grantee the contaminating factor. So my cereal cupboard contains:
Chex, Rice, corn Cinnamon, hunny nut
General Mills’ Dora the Explorer
Trix,
Corn pops,
Coco puffs
Malt-o-Meal Dino Bites
Cocoa Pebbles

I got a coupons in the mail for Rice crispies, which we avoid due to the dreaded molt flavoring, and they are going GF!! And made from BROWN rice.
GO figure.
I'm getting more Normal every day!

Strewberry trifle

I got a link to a recipe from my mother in law. Strawberry Trifle, made with pancakes?!?!
We GFers can do pancakes NO PROBLEM.



I had to alter the Original recipe.
The GF bisquick requires a little more liquid to make pancakes. And I altered the white layer's ingredents to make it easier and faster

Pancake:
2 Cups Gluten free Bisquick® mix
1.5 Cups milk
2 eggs
-Make pancakes with a generous table spoon

1 tub Betty Crocker Whipped cream cheese frosting {GF}
1 tub whipped topping
-Mix together until smooth

Layer pancakes on the bottom of a glass bowl.
Pour on half of the white mixture.
Then one cup sliced up strawberries and one cup blueberries
Then rest of pancakes, rest of white fluff and then more berries

strawberries jam: in the microwave

While Jam is not necessarily something that we worry about being GF, being able to make it in the microwave is exciting.
With this recipie I made Jam in a little colege apartment.
I crushed the berries in a galon sized plactic bag, microwaved them in a big glass bowl.
Fresh Washington strewberries are the most juicie by far, so two little baskets are plenty for this recipes.

So here you go:
strawberries jam: in the microwave
2 cups of crushed strawberries.
1.5 tbs lemon juice
1.25 cup sugar
.5 tsp butter

Put everything in a 2-quart glass measure.
Microwave uncovered, on high, 6 minutes
stir
Microwave uncovered, on high, 3 minutes,
stir
Microwave uncovered, on high, 3 minutes,
stir
Microwave uncovered, on high, 3 minutes,
stir
Microwave uncovered, on high, 3 minutes,
stir, and let cool a little before you pour into storage container and refrigerate

Makes about 2 cups.
