flourless fudge cookie

Flour less fudge cookies
3 c  powdered sugar
1 c cocoa powder
1/4 tsp Salt
1/4 c mini chocolate chips
1/2 c pecans, finely chopped.
4* Egg whites
( *if you are leaving out the nuts and chips, you only need 3)
Whisk the sugar and coco, then add the eggs, and mix by hand until all the dry is wet, then mix in the chips and nuts. Don't over mix. The batter is stiff, not as stiff as dough, but stiffer then pancakes.
Preheat oven to 325.
Line baking sheet with parchment. Scoop out in teaspoon sized drops. I got 4 dozen little cookies.
Bake for about 10 minutes.
Sort of like a chocolate mering, but with a chewy center.
Very tasty, and with no fancy ingredients.

I'm taking these and the Peanut butter chewers to a cookie exchange.

Pop corn Balls- recipe 3 Jello Pudding

Pop corn Balls- recipe 3:
Jello Pudding
One bag microwave popcorn, (popped)
1/4 cup brown sugar
2/3 cup sweetened condensed milk
one package butterscotch pudding powder

In a microwave safe bow, mix, sugar, milk and pudding.
Microwave, stopping to stir, until boiling. Microwave a few more minutes.
Then pour over the popcorn.
Oil hands and form into balls.

Pop corn Balls- recipe 2:
Jello and Syrup

1 C. light karo syrup
1/2 C sugar
3oz. box jello
one bag of microwave popcorn, (popped)


On the stove top, in a large pot, bring karo syrup and sugar to boil, add jello stir until dissolved.
Pour over popcorn and mix. Oil hands and form popcorn into balls.

Pop corn Balls- recipe 1 Jello & marshmallows

Pop corn Balls- recipe 1:
Jello and Marshmallows

16 oz. of marshmallows
6 oz. pkg.  jello
One bag, microwave popcorn (popped)
2 Tb butter
  In microwave melt butter and marshmallow.
Once smooth, add Jello powder, stir till color is even.
In a LARGE bowl, pour the sauce over the popcorn.
Oil hands, and form into balls.

"ratio rally"

I just stumbled across this "group"
Apparently they do recipes, based on a ratio, and then have a challenge each month.
It appears to be based  on Michael Ruhlman's book "Ratio: The Simple Codes Behind the Craft of Everyday Cooking"
I completely agree that baking should really be done by weight, but who has the time?
I got a very good food scale, about 8 years ago, but it's relegated to the top shelf with the waffle iron and other appliances that don't get much use.
Well these ladies inspire me.
I'll be getting that scale down for the Christmas cookie baking.
