Arrowhead Mills Gluten free cookie Mix review

Arrowhead MIlls Gluten free Chocolate chip Cookie Mix.

Meh.
The chocolate chips come mixed into he mix, so you can't mix very well, as the chips get in the way.
This makes for an inconsistent dough.
It was OK. Not much flavor and not enough chocolate chips.
So I improved it.

Hand full of oats, chocolate chips, and cherry flavored chips.
Better.

Gluten free Oatmeal Banana Peanut-butter Cookie recipie

Gluten Free Oatmeal peanut-butter banana Cookie recipe
1 1/2 Cup GF Flour blend (I used Betty Hagmen)
1 Cup White sugar
1 tsp Salt
1/2 tsp Baking Soda
1/2 tsp pumpkin pie spice.
1 1/2 Stick Butter melted
1 egg
1 Cup Banana, mashed.
1/2 C Creamy peanut butter- melted
2 Cups GF quick cook oats (bob's red mill)
1/2 cup chocolate chips. (and or chopped peanuts)
Mix Flour, sugar, salt, Bk Soda, spice, and butter until well blended. Stir in Egg, banana peanut-butter and oats. 
Chill in Fridge for at least 20 min, then pre heat oven to 375.

Drop a tablespoon sized balls onto parchment paper.
Bake for 10-15 min until puffy and slightly golden. Will not brown much due to the peanut butter.


I consider the function of a Drop cookie to be the vehicle by which chocolate chips are delivered.
However, since my toddler is loosing weight, we are getting creative trying to get food in him. Let alone fruit and vegetables.
SO I'm on the hunt for recipes.
This idea come to me as I was contemplating the four Bananas browning on the counter. Not feeling like Bread, or muffins, I decided on oatmeal cookies. And since the Gluten free flour blend can lack the binder that cookies require, I added the peanut butter.
And Viola!
Squeakier ate about 3.
Better then nothing.

Happy Pi DAY

3.14
March 14 each year is Pi day. and In Pi 3.14159.......
SO I make pies.
This year; Pecan and Banana cream.
I used a pre-made shell I got at Whole foods. The Brand was. crave foods.
It was a disappointment. I little too much bean flour flavor. And it could not stand up to the temperature required for the Pecan Pie.

Pecan.
I used the recipe on the back of the bag of Pecans. First time I have aver make pecan pie. It's 4/5th sugar. 1/5th nuts. SERIOUSLY!

Banana cream
 was made with a Banana pudding, Bananas, and a Marshmallow marigue. Then toasted. Yummy

re-purposing

They say when life hands you Lemons, make lemonade
When life hands me a bread that is not what I expected, I make french toast.

SO I turned the not sweet enough Pull apart/monkey bread into french toast. With butterscotch syrup.
Super yummy

Gluten free Butterscotch Pull apart

For Special occasions my mother makes "butterscotch pull apart"
I have also heard it called monkey bread.
I have not had it in over a decade. So I thought today was a day to give it a try.
Knowing that I could turn Pizza dough into cinnamon rolls and I thought I could use my french bread dough to make the pull apart.

I got my hands very wet, and them pinched off a golfball sized bit of dough. The rolled it into a ball, and then dropped it into the angel-food cake pan, which I lined with parchment paper.

I made a layer of the balls, them sprinkled with instand butterscotch pudding powder.
Repeat.
WHen all th dough was used up I let rise.
Then baked it.

 It was good. But as you can see, not butterscotch enough. It turned out more like a glaze over a nice loaf.
I WILL be doing this again, but with more pudding, butter, and pecans. That syrupy stickieness is what I'm going for.

Deep Fry onion Rings, Gluten free style

Since we had the Deep fryer out from Lunar new year, I decided to mix up some batter and make a few things.

Onion RIngs.
The trick is to Cut the onion under running water, and rinse the slices off.
Then lay them out on paper towel, and pat dry.
That is how you get the batter to stick.

Batter Recipe.
1 cup GF Pancake mix.
one egg
Dash seasonings (NOT SALT)
Enough milk to make batter the consistency of yogurt.

Submerge onion ring. Shake excess batter gently off. Drop into Hot oil.
Batter also good on Fish.

Against the Grain Gourmet Baguettes review

I think I have posted the Recipe for my Lasagna before.
This post is about the bread.
Against the grain gourmet. Baguettes.
Got them frozen, them microwaved for 30 seconds.
It was delicious!.
Good crust and slightly chewy inside.
Very nice texture. I was able to tear pieces off the loaf.
It went very well with the Lasagna.
