Bananna Fudge cookies, gluten free

Recipe:
1 large egg
1 large ripe Banana
3/4 cup Strawberry banana V8 juice. Warmed.
1 pkg Brownie mix, Bob's red mill

Preheat oven to 350
Mix the Banana and egg. Add in the Juice. Mix well.
Add in the Brownie mix, and beat until smooth.

Line cookie sheet with parchment paper. Drop dough by tablespoon onto parchment, about 2 inches apart.
Bake for 15 min.
Cookies should be spongy.

Banana split cup cake

As it is spring, I thought a fun cupcake was in order.
Banana split cupcakes are popular right now, and I just so happed to have some Bananas.
 
Banana cake.
Crushed pineapple filling.
Strawberry buttercream frosting.

Gluten free Yellow cake mix turned into Banana Cake.

1 cup ripe bananas, mashed up.
1 pkg Bob's red mill, gluten free yellow cake mix
eggs

1/2 Cup oil
1/2/ cup water
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 cup chocolate ships

DIRECTIONS:

Be sure all ingredients are room temperature. Put bananas and oil in blender and liquefy. Pour mix, vanilla and spices into to cake mix. Use electric mixer, on med-high. Add eggs one at a time, beating well. Fold in Chocolate chips. Pour batter into greased and floured minni bundt pans.  Bake at 350 degrees F for about 30min, then check for doneness.

Peach Pie

Gluten free Peach Pie with Crumble top. 


Whole foods, ready made, unbaked, pie crust.
Caned Peaches
Topped with Bob's red mill oat crumble crust.

Recipe for Caned peaches Pie filling
3 can's peaches.
1 Cup sugar
3 Tb tapioca flour.
1 tsp each Nutmeg and cinnamon

Drain peaches, reserving only 1 cup of liquid.
Mix with sugar, tapioca and spices.
Arrange peaches in pie crust, pour mixture over.

3 layer Lemon Pie

I am reluctant to call this Lemon meringue, because it's not meringue. It is topped with marshmallow fluff.


1 8" cookie crust.
.75 Cup Soy milk. Cold
2 Small pkg vanilla instant pudding
2 Tb Lemonade concentrate, thawed
1 Tub (8oz) whipped topping, thawed
1 Jar Marshmallow fluff

Layer 1. To one dry pudding add milk, and lemonade. Beat until thick.
Layer 2. to half of the whipped topping, fold in the other pudding powder.
Layer 3. Fold second half of whipped topping into Marshmallow fluff.
Refrigerate until time to serve.

OR

Crust. Either cookie or pre baked regular pastry.
.75 Cup Soy milk. Cold
1 Small pkg lemon instant pudding
1 small pkg lemon Jell -O
1 Tub (8oz) whipped topping, thawed
1 Jar Marshmallow fluff

Layer 1. To dry pudding add milk. Beat until thick.
Layer 2. Make the Jell-O, Let set in fridge for about 30 min. Then fold in half of the whipped topping
Layer 3. Fold second half of whipped topping into Marshmallow fluff.
Toast with one of those fancy kitchen gadgets.

Cranberry Pork

Summer has come to Seattle. 10 days of 70 degree weather. So for my house, that is too hot to use the oven.
SO bring on the BBQ and the crockpot.

Today's is a Cranberry pork.

Ingredients
  • 3 lb pork.
  • 1 tsp ground ginger
  • 1/2 tsp mustard powder
  • 1 Tb  garlic powder
  • 1/2 teaspoon each of Salt and pepper
  • 2 tablespoons thickener. Tapioca, corn or arrowroot.
  • 2 (16-ounce) can cranberry sauce, Whole berry
  • juice of one Lemon
Put pork in slow cooker. Cover with dry spices.
Pore the sauce and juice on.
Set to low for 8 hours.

Vanilla cupcakes, filled with Yummy

Cupcakes, with jam and cream filling.


Cupcakes made with Bob's red mill Vanilla cake mix.
Sliced in half, smeared with Blackberry preserve, and dolloped with whipped topping.


The Cake turned out quite dense. It was moist in the cense that is stuck to your fingers, but dry in your mouth, making it difficult to swallow.
