3 layer Lemon Pie

I am reluctant to call this Lemon meringue, because it's not meringue. It is topped with marshmallow fluff.


1 8" cookie crust.
.75 Cup Soy milk. Cold
2 Small pkg vanilla instant pudding
2 Tb Lemonade concentrate, thawed
1 Tub (8oz) whipped topping, thawed
1 Jar Marshmallow fluff

Layer 1. To one dry pudding add milk, and lemonade. Beat until thick.
Layer 2. to half of the whipped topping, fold in the other pudding powder.
Layer 3. Fold second half of whipped topping into Marshmallow fluff.
Refrigerate until time to serve.

OR

Crust. Either cookie or pre baked regular pastry.
.75 Cup Soy milk. Cold
1 Small pkg lemon instant pudding
1 small pkg lemon Jell -O
1 Tub (8oz) whipped topping, thawed
1 Jar Marshmallow fluff

Layer 1. To dry pudding add milk. Beat until thick.
Layer 2. Make the Jell-O, Let set in fridge for about 30 min. Then fold in half of the whipped topping
Layer 3. Fold second half of whipped topping into Marshmallow fluff.
Toast with one of those fancy kitchen gadgets.

  1. EDIT: Do NOT put the Pie in the oven to toast the marshmallow. This will return the Jell-O to a liquid state, and the pie will be destroyed.
    Trust me, I did it.
