Onion Rings

I spotted these in the freezer at our local whole foods.

There was not much in the bag, so a bit overpriced. It was a very sweet onion.
Over all; tasty but too expensive.

Grandma's Cupboard cookies

I have also heard these called Ranger cookies. They are a loaded up version of oatmeal cookies. In our family you load then with what ever you have in the cupboard. The last quarter cup of chocolate chips, butershotch chips, and what ever nuts and dried fruit are handy.
There is not much flour in them so I tried to substitute some Gluten free flours straight across.
Very disappointed.
I put the rest of the dough in a pan, to try to turned them into bar cookies.
no dice there either.
I need a better recipie...

"allergen Alert" what is says to me

I have  Celiac Disease so my approach is different that say a person with a wheat allergy, or someone choosing a gluten free diet for other reasons.

So My philosophy is this:
"May contain wheat" I will PASS
"Certified Gluten free" Dig in!
"dedicated gluten free ..." Woo Hoo!
"Processed in a shared facility..." Proceed with caution
"Processed on shared equipment" Depends on the product

When it comes to equipment, and facility, this is what I think.
A facility can be several buildings large. The things with gluten could be no where near the gluten free products, and they could be in the same room. It's hard to tell.
Take Bob's red mill. They have a dedicated glutnen free department. Dedicated gluten free building. But Bob's Red Mill as a facility also produces things that are not gluten free. But I trust Bob's red mill to check the finished product. In this day and age I trust most of the big companies to CYA. So they are safe. Over a decade ago when I started eating gluten free I did not trust ANY one.
I remember all too well a young women saying to me " Gluten?...No I'm sure there is no sugar in it."
But Gluten awareness has come a long way since then.

Julie's ice cream sandwich cookies

On long summer road trips, when I was a child, back when you had to go inside to pay for your gass, sometimes dad would come back to the car with ice cream sandwiches. Gas station ice cream sandwiches can hardly be called "good food" but they were a treat none the less. Not one that I have missed in my nearly a dozen years gluten free.But when one of my best friends, also gluten free, told me these were worth a try, I picked them up.
Boy was she right!
Julie's  Gluten free ice cream sandwich cookies.
Yum Yum!
Made using the Glutenfreeda's gluten free chocolate cookies and organic vanilla ice cream.

You have to wait to let the ice cream soften just a bit, and they are everything that I remember ice cream sandwiches to be, but all grown up.
Very rich ice cream.
At 200 calories and 30% of your saturated fat, I spread the 4 sandwiches out over a two weeks.

Now, Julie's is not a gluten free company. There focus is Organic. They made the vanilla ice cream. But they also make non GF ice cream, in the same "facility"
SO if you are UBER sensitive, and they fact that the cookies and cream ice cream was made in the same "facility" as this vanilla, then you have to make they call for yourself.
A rep from Julie's says ""We make the claim of ‘Gluten-free’ with this product because we test for gluten and verify that it is not in the finished product. However, our experience has shown that some consumers are equally concerned about shared equipment, so our allergen warning statement is offered to alert those consumers of the fact that we also process gluten-containing products in our facility."
So if they are testing the finished product, that's good enough for me.

Quiche, Magic "crustless" Gluten free

Even though you just mix in some flour, it bakes into a crust on the edges!
Much easer and simpler then a pastry crust.
This recipe is very versatile, I use up the leftovers in the fridge.

Basic Magic Quiche
4 eggs
.25 cup Rice flour
.25 cup Corn flour
.50 tsp baking powder
.25 tsp salt
1.3 Cup milk
.50 Cup cheese shredded*
6 oz cooked spinach ( I use the frozen block, thawed)
.25 Cup Vegetables*
.25 meat*
Dash seasonings*

Grease Muffin pan, (or 6 ramekins)
Preheat oven 400
In a large mixing bowl, whisk: eggs, flour, baking powder, salt, milk.
Stir in cheese, Vegetables, meat and seasonings
Bake 45 minutes.


* Favorite combo's:
Colby Jack, onion mushroom tomato, leftover taco meat, taco seasoning
Mozzarella & feta, Onion zukini, bacon, Italian blend
Cheddar & Swiss, onion, ham, dill

Meat balls Recipie

Yummy Meat Balls
.5 Lbs Lean ground beef
.5 lb Ground Turkey
1/2 cup Undi Bread, broken into crumbs
1 egg
1/4 cup beef broth
2 TB Ketchup

Mix everything together
Divide into 6 balls
Spray oil a muffin Pan
Drop the meat balls into the Muffin pan
Bake at 350 for 1 hour
