Quiche, Magic "crustless" Gluten free

Even though you just mix in some flour, it bakes into a crust on the edges!
Much easer and simpler then a pastry crust.
This recipe is very versatile, I use up the leftovers in the fridge.

Basic Magic Quiche
4 eggs
.25 cup Rice flour
.25 cup Corn flour
.50 tsp baking powder
.25 tsp salt
1.3 Cup milk
.50 Cup cheese shredded*
6 oz cooked spinach ( I use the frozen block, thawed)
.25 Cup Vegetables*
.25 meat*
Dash seasonings*

Grease Muffin pan, (or 6 ramekins)
Preheat oven 400
In a large mixing bowl, whisk: eggs, flour, baking powder, salt, milk.
Stir in cheese, Vegetables, meat and seasonings
Bake 45 minutes.


* Favorite combo's:
Colby Jack, onion mushroom tomato, leftover taco meat, taco seasoning
Mozzarella & feta, Onion zukini, bacon, Italian blend
Cheddar & Swiss, onion, ham, dill
