Gluten Free Oatmeal peanut-butter banana Cookie recipe
1 1/2 Cup GF Flour blend (I used Betty Hagmen)
1 Cup White sugar
1 tsp Salt
1/2 tsp Baking Soda
1/2 tsp pumpkin pie spice.
1 1/2 Stick Butter melted
1 egg
1 Cup Banana, mashed.
1/2 C Creamy peanut butter- melted
2 Cups GF quick cook oats (bob's red mill)
1/2 cup chocolate chips. (and or chopped peanuts)
Mix Flour, sugar, salt, Bk Soda, spice, and butter until well blended. Stir in Egg, banana peanut-butter and oats.
Chill in Fridge for at least 20 min, then pre heat oven to 375.
Drop a tablespoon sized balls onto parchment paper.
Bake for 10-15 min until puffy and slightly golden. Will not brown much due to the peanut butter.
I consider the function of a Drop cookie to be the vehicle by which chocolate chips are delivered.
However, since my toddler is loosing weight, we are getting creative trying to get food in him. Let alone fruit and vegetables.
SO I'm on the hunt for recipes.
This idea come to me as I was contemplating the four Bananas browning on the counter. Not feeling like Bread, or muffins, I decided on oatmeal cookies. And since the Gluten free flour blend can lack the binder that cookies require, I added the peanut butter.
And Viola!
Squeakier ate about 3.
Better then nothing.
