Pad po tak. Thai noodle seafood and sausage (gluten free)

 I think this would be called Pad Po Tak.
It's a variation and amalgamation on a few recipes

Soak rice noodles in cold water 3 hours. Then drain.

 To make sauce, mix
 1/4 tsp Thai green
curry paste (I used red, should be more mild)
 3 Tb Coconut cream

 3 Tb fish sauce
 2 Tb white sugar
- mix together, set aside.

- Heat a large deep sided pan. In 2 Tb of oil sauté
 1/4 lb Shrimp, shelled, deveined
 1/4 lb white Fish, cut into bite sized pieces (snapper, cod, tilapia)
 2 Thai Sausage, Lemmon grass,  sliced

-then add
 1/2 cup bell pepper, diced
 1/4 cup fresh basil
 Noodles
 Sauce
 -Stir to coat.
 -cover and simmer for 3 minutes, until noodles are translucent
.

Excellent on its own, or with another Thai dish, like curry soup.

Breakfast Bullets

This started out as a crust-less Quiche.
Then, I decided to put it in muffin pan, to make individual servings
Then I decided to make it microwaveable.
 
Breakfast Bullets
1 Cup broccoli florets
1/4 C baked potato, crumbled
3 slices of bacon, crumbled
2 slices Cheese, Colby Jack
4 eggs
1/4 C Parmesan cheese
 
In a silicone Muffin pan, distribute the Brocci, potato, bacon.
Top with cheese slice.
 
In a small bowl, beat the eggs, with the Parmasane and season to your liking.
Pore the egg mix in to the cups.

 
 Microwave for 2 min.
I served these with breakfast, on Pi day. Because it is round.

Califlour crust

This was my second try at making a cauliflower pizza crust.

4 cups grated cauliflower
1 egg
.25 cups Parmesan, Pre grated, from the Tub
.25 cup shredded Colby Jack blend
Pinch salt and a dash of Italian seasonings

*Preheat oven to 400 WITH pizza stone inside.
1. Put cauliflower in a microwavable dish, cover, and cook for 3 min.
2. Put the cauliflower into mesh strainer, and drain off the water. Give it a good press, to get as much water off as possible.
3. Mix the cauliflower with the rest of the ingredients.
4. On a piece of parchment paper, press the mixture out into a crust shape.
5. Slide the parchment and crust on the stone in the oven and Bake 35 min.
6. Pull the Crust out (still on the parchment) onto a cutting board or cookie sheet, and put your toppings on.
7. Bake on the Stone for another 5-10 min to finish the toppings.

Bread? Don't need no bread!

I started eating gluten free in 2001.
It was very difficult to find gluten free sandwich bread, and what I could find was not that good.
So I made other choices.
#1, was Apple.



 
Two, thin slices of apple, a little honey ham, and Colby jack cheese.
Super easy, and tasty.

Thanks giving Loaf, Gluten free

I got ground turkey, in bulk, and I remember my mother making a turkey loaf, years ago, instead of a turkey for thanks giving. And Right now I'm trying to work on simpler meal plans. So after searching the internet, I came up with this fun dish:

Thanksgiving Turkey loaf, with Special cranberry sauce.

The Loaf:
1C Gluten free Bread (Crumbs)
1 Carrot (grated)
1/2 onion (grated)
1/4 apple (grated)
1 egg
2 TB milk
A little Rosemary, sage, salt and pepper
     (I put all this whole in the food processer, and pulsed until combined, but grating would work too)
1.5 lbs Ground turkey.
Mix that up good and press into a 9X5 loaf pan.

The Sauce
1 can Whole berry cranberry sauce
1/2 onion (grated)
1/4 apple (grated)
2 TB apple cider vinegar
Salt, pepper,
-Mix up good, and smear half of it over the loaf.

Bake at 375 for 25 min.

Then serve with the other half of the Berry sauce.

Pork Roast Apple


5  lb pork roast
1/4 of a medium apple, in 6 slices
1/3 Cup Cutup
1/4 Cup Apple Cider vinegar
1/4 Cup Water
1 packet (single serving) Apple cider drink mix
1 Tb soy sauce
1 Tb Worcestershire sauce
1 Tb apple sauce
1 Tb grated Onion
1 tsp Brown mustard

Poor just enough into the pot to cove the bottom. Then place the roast in. Make a slit in the roast 6 times, and insert apples slices into those slits. Pour the sauce over it.
Low for 4 hours, then high for 2 hours.

Gluten free Tuna Noodle Casserole recipe

So, I didn't have any Gluten free condensed soup on hand, so I googled a recipe for tuna noodle from scratch, and came up with this one.
I made a few modifications, to make it Gluten free, and less hassle.
And It occurred to me, that all of the ingredients are from Costco.

One Package noodles, Goldbaum's Brown Rice, Penne, Gluten free, from Costco
4 oz butter
1/4 cup Flour, Bob's red mill, from Costco
1 1/2 cups milk
12 oz of tuna
2 slices, bread, heal pieces, Udi's from Costco
1 cup shredded cheese

-Cook noodles, per package.
-In medium saucepan, melt butter, over low heat, then whisk in flour, one Tablespoon at a time. Then whisk in Milk, slowly. Keep whisking for 4 min. Then add salt, pepper, garlic powder, onion powder, to taste.
-Mix sauce, noodles, and tuna together. Pour into 9X13 baking pan.
-Top with bread crumbs, and cheese.
-Bake ay 375, for 8-10 min.

Gluten free Potato Casserole

Potato Casserole (similar to scalloped potatoes)

lb Ground beef, browned
5 Potatoes, medium baking
2 cup cheddar cheese, shredded
2 cup Monterey jack, shredded
8 oz Velveta cheese
1 packet GF brown gravy
1 c water
1/4 cup milk
 
PREP
- Mix the Gravy packet with the water, and microwave for 30 sec, whisk, then 30 sec, then whisk. Repeating for about 2 minutes, or until gravy begins to thicken. Then add the milk.
-In-between whisking the gravy, use your hand and a knife to brake the brick of velvets into small pieces.
-Potato should be slices about 1/4 of an inch thick.
 
Assemble
-Spoon a few scoops of the gravy. onto the bottom of a 9X13 pan. Then place potato slices in a single layer. Then a few spoons of gravy, then a second layer of potatoes.
-Next layer about half of each kind of cheese.
-Then a layer of potato. Then gravy. Then potato. Then rest of gravy, rest of cheese. 
-Cover with foil.
 
Bake
350 for 45 to 55 minutes. 
 
 
Variations 
I have used a packaged cheddar Jack blend.
I have used sliced Pepper Jack for the middle layer of cheese, giving the potatoes a texMex flair.
I have used leftover Han instead of beef as well.

Taco Chowder

Taco Chowder (thicker then soup, but thinner then a dip)

1 Lb ground beef, cooked
1 Can (28 diced tomatoes
1 Can re-fried beans
1 Can black beans
1 Can mexi corn
1 can (10 oz) tomato soup
1 package Taco seasoning

crockpot, high, 4 hours

Serve with
cheese
corn chips
Sour cream
Ranch dressing

polynesian Pork Chops. Glunten free slow cooker.




The original recipe is here. She calls it Soy sauce and mushroom soup pork chops But I modified it to be GF, and gave it a shorter name.

1. Marinade pork chops in Soy sauce and brown sugar for one hour.
2. Put soup in slow cooker. Add can of mushrooms.
3. Put pork on top of soup.
4. Cook on low for 8 hours (or high for 4).

Super moist, and chops fall apart with fork. I would not have thought that soup and soy sauce go together, But I think the brown sugar makes it more a teriyaki sauce, and then the mushrooms and cream lend it an almost Polynesian flavor.

Chili corn dog casserole, gluten free. With Moon rabbit foods corn bread mix

Recipe for gluten free
Chili corn dog casserole
two can Chili (Hormel is labeled GF)
Package hot dogs (Hebrew national Beef Franks are labeled GF)
Cornbread mix (Moon Rabbit foods)
shredded cheddar cheese

instructions:
Make corn bred batter per packaging.
Pore chili into pan.
Place hot dogs on top of chili
Layer with cheese
Spoon Cornbread batter on top.
Sprinkle with cheese.
Bake per the corn bread package instructions, plus an extra 10 min or so. The chili under the bread adds extra moisture making the bread take longer.

We liked it. The moon rabbit corn bread is a little bland on it's own, so it was a nice balance to the chili. I could have even gone with a spicier chili. I could have added some diced bell peppers to the chili, or even some caned corn.
Super fast assembly, of things that you can have around. Open a couple of cans, mix up some cornbread, and into the oven.

GF Sweet and sour pork. Deep fried


I started with the King Arthur Gluten free flour blend, a little baking soda, and baking powder. Then milk. (no egg this time, and I think I liked the results)unfortunately, I did not measure as I made the batter for the coating, so I can't tell you what was in it.
It turned out supper yummy.
The basic idea is that a pancake batter makes a good deep-fried coating.
I used the LaChoy Sweet and Sour sauce. Not Certified GF, but a brand I trust.
Then some diced bell peppers and pineapple tidbits.

Pumpkin roast

 So, I see all over the internet fun fall foods.
And, after mu first pumpkin turned Cyperman, and then had to be "deleted" I decided the next pumpkin would be for eating.
Hubby and I took Squeaker to the local pumpkin patch, and picked out two nice looking sugar pumpkin.
Our fist recipe is for Pumpkin roast. it's a variation of a recipe I found HERE.
But their version is a little too labor intense. And I thought I could do it quicker, and easier.

Viola!

Pumpkin roast.

 1 sugar pumpkin (rest of recipe makes enough to fill 2)
12 oz. baby white potatoes, quartered
7 carrots, peeled and cut  into chunks
5 parsnips, peeled and cut into chunks
1/2 medium butternut squash, peeled, seeded, and cut into chunks
5 granny smith apples, cored, cut into chunks.
Bag frozen brussel sprouts,
Bag frozen. green beans
2 cups cooked chicken chunks ( I used left over roast chicken)
1 c. chicken broth
2 tbsp. unsalted butter
2 tbsp. garlic salt
Dash pepper
 
Take the cut up carrots, parsnips, and potatoes. Smear olive oil in a 9X13 pan, and then toss the veggies in, with another 1/4 cup of olive oil, and some salt and pepper.
Bake at 375 for 40 min
Combine apples and squash in a microwavable pan, and heat for 6 min.
Place Pumpkin in casserole dish, rub inside with oil. Bake at 375 for an hour.
In a large bowl, combine roasted veggies, apples, squash, and frozen veggies. Add the meat, and Pour the broth and butter and garlic over the top, and mix.
As soon as the pumpkin finishes it's first hour, Spoon as much of the veggie/meat filling in, and put it back in the oven for another 15-20 min. (I freeze the other half for another night, and another pumpkin)
It's down to a two hour baking time, with about 45 min of prep. Down from the 5+ hours the original recipe would take. I am sure the flavor would be richer, if you did not use frozen, and you roasted everything, and the apples got sautĂ©ed in butter, but I will trail a little flavor for convenience.

Chripy baked chicken, gluten free

I've been on the internet looking for baked chicken recipes, and I think I understand the basic idea.

Dredge chicken in wet.
cover in dry
bake at 350 for 30 min

Within that, I can make variations in the wet and dry for different outcomes.

Idea one:
Onion, garlic Parmesan.*

Wet Ingredients: Mayo and lemon juice
Dry Ingredients: Dried onion, parmesan cheese, garlic seasoning blend
 


*So, my mother can not eat dairy, onions, garlic, bell peppers and a few other things. But My dad can. So when he cane over, and stayed for dinner, I wanted to feed him something he does not usually get to have. So those ingredients are where I started.

gluten free corn dogs, product review

Hubby got me a box of Applegate naturals, Gluten-Free uncured beef corn dogs.
Also non dairy.

They were quite dry. As in you can't breath while you have some in your mouth or it ends up in your lungs.
They tasted alright.
Sadly, they and my pregnancy acid reflux did not get along. So I don't think I can try them again, for psychological reasons.

Gluten free meatloaf peppers

Recipe for Gluten free Meatloaf Stuffed Peppers

2 Bell peppers
1/2 Lb ground meat.
2 "heal" pieces of gluten free bread, crumbled
1 tomato, chopped
1/4 cup Parmesan cheese
Dash of oregano
Salt and pepper
Shake of dried Garlic
Shake of dried Onion
1/4 C ketchup
1/4 tsp. Worcestershire sauce

1. Top peppers. Dice up top to use in filling
2. Preheat oven to 350
3. Mix meat with bread, tomato, pepper, cheese, and seasoning.
Stuff into pepper.

4. Mix sauce and ketchup. Top peppers
5. Place in a bread pan, with 1/2 cup water in the pan around peppers
6. Bake for an hour or internal temp of 150-160 F


I'm not sure when it started, but my mother got into portion control. She focused on meals that were casserole like, but that were already segmented. One of which was meatloaf. She would put it inside a bell pepper. NOT stuffed peppers, Stuffed peppers uses Mexican seasonings, and rice. This is still meatloaf, it's just inside a bell pepper.
One night as a newlywed I told my Hubby I was making meatloaf. So when Bell peppers appeared on the table he was surprised. He says I can't call it "meatloaf" if its not in a loaf shape. I say it's not "stuffed peppers" because that is a rice dish. So it remains an enigma. But it tastes good.

To Soup or not to Soup

I'm not a fan of soup.
I prefer to eat my food and drink my beverage.
I don't really like stew either.
I have managed, over the years, to find a place for tomato soup and seafood bisque, but your basic water based soup is not part of my repetware.
All the same, it does come up.
And I was given a Gallon bag of Chicken soup, my a friend, with the instructions to heat in the crockpot, and add noodles.
Well, I put the WHOLE bag Gluten free Penne noodles in.
They absorbed 90% of the liquid, and I had a decent casserole.
I will have to remember that.

Udi's gluten free frozen pizza: review.

Its handy to have a frozen pizza on standby incase the family decided to order delivery.
Sure, there are delivery places that have GF, but the price and the cross contamination are a deterrent.
So when the frozen Udi pizza went on sale at the local grocery, I picked up two.

And sure enough, a few weeks later the occasion came. I pulled out the pizza, and preheated the oven, and noticed that in TWO places on the instructions it said NOT to use a pan or a pizza stone. "directly on rack" was expressly instructed.
But it turns out that was not a good idea:

The center of the pizza FELL OUT. Splat onto the bottom of the oven.

SO I thought, "was it because I added some olives and extra cheese to the pizza?" did I inadvertently exceed the maximum weight limit of the pizza crust?
So the next day when everyone else was have leftovers, I tried again with the second pizza.
Same problem again. Luckily I put a pan under it and caught the fallout, so I did not have to scrape cheese off the oven again.
Don't know if I got a bad batch, or what. But I don't think I will risk wasting money on this item again.

Chicken Bock Choy

Chicken and Bock Choy
Oil. enough to coat the pan.
Garlic. a clove or two, diced
Ginger. a few generous shakes
Chicken. 3 lbs.
Soy sauce. 3 Tbs
chicken broth. One can.
Bock Choy, one big bunch. Sliced into 1/2inch pieces

  1. Heat the oil in a large, deep sided Pan
  2. stir in Gallic and ginger
  3. When it become translucent, add chicken, and brown.
  4. Add Soy sauce, and broth.
  5. Add Bock Choy. Cover and stem until leaves are limp.
  6. serve with rice

This is a dish I make often.
I don't exactly measure it, I just shake things in.

Gluten free Moussaka recipe. Egplant, meat and cheese caserole.


 
Gluten free Moussaka recipe
Ingredients:


  • 2 cups parmesan cheese
  • 1 cup mozzarella cheese
  1. In a hot pan, turn oil, and fry the eggplant until just brown. As you finish them, lay them in the bottom of a 9X13 pan, until the bottom is covered. put the rest on a plate.
  2. Brown the meat. then add the seasonings, tomato sauce, "wine". Simmer a little to get the flavors in. Remove from heat, and stir in the egg. Spread over the eggplant in the 9X13.
  3. Sprinkle about 1/2 of each cheese as the next layer.
  4. Layer with the rest of eggplant
  5. Layer the rest of cheese.
  6. Make the "BĂ©chamel" sauce. Melt butter, mix into flour. Add to the milk, over low heat. Simmer until thick.
  7. Bake at 350 for about an hour.
Story: I have watched "my big fat Greek wedding like 100 times. And in it she takes "mousse kaka" to school for lunch. So when it came up in a list of "easy eggplant recipes" I jumped on it. And we are not disappointed. Much better reviews then my eggplant parmesan.
