Norma's Fudge. No cook Cheese fudge


The recipe:

1/2 lb butter
1/2 lb velveta cheese
2 1/2 c dry milk powder
2 lb powdered sugar
1/2 C coco
2 Tsp Vanilla

Let butter and cheese reach room temp
Beat smooth with Heavy duty stand mixer dough attachment.
Gradually add milk powder.
Sift the powdered sugar and coco in gradually. Add the vanilla about half way tru the powder
It will be very stiff.
Press into a parchment lined 9X13 or 9X11 depending on how thick you want pieces.
Let set for a few min, then slice, then refrigerate or freeze. If you chill before cutting, you will never cut it. it is a BRICK of fudge.

The Story:

My grandmother Norma worked for the School lunch program back when it started. They were issued government subsided quantities of food, and told to incorporate them into the menu, and still meet all these standards. In particular the kids had to have a certain amount of protein each meal.
So, grandma took the government powdered milk, and processed cheese, and invented this fudge.

Choclate mouse pie. Or "Killer death pie"


 
In our family this is known as "killer death pie"
We call it that because it is sooo sweet that one pie is enough for like 10 people. Any more then a small slice can make your teeth hurt.
It's super easy. And it has won pie competitions.
 
Chocolate Pie Recipe:
1 lb of chocolate bars, melted in a warm oven for about 30 min.
1 lb of frozen whipped topping, left on counter while chocolate melts.
1 1/2 cup chocolate cookie crumbs (I used MiDel)
6 TB butter, melted
 
Use butter and cookies to make crust.
Fold whip and chocolate together, and put in pie crust.
Freeze for 6 to 8 hours.

Coco Spoon

Christmas Gifts. I made little Trees, and Santa chocolates from a mold, and then stuck them to spoons I have dipped in more chocolate. Then I gave them as gifts, with a mug and some packages of coco.

Popcorn Balls. 5 Dark Caramel

Today's popcorn balls are a rich Dark Caramel.
It's a variation on a recipe By Robert Irvine, (from Food Network) he uses for making caramel apples.

Dark Caramel

2 Cups dark brown sugar.
1 stick butter
1/2 can sweetened condensed milk
1/4 c corn syrup
1/4 c maple syrup
1 tsp molasses
1/4 tsp vanilla
pinch Salt.

Heat on stove top until boil. Boil 3 minutes.
Allow to cool slightly.
Pour over popcorn, or Apples.
I made 3 apples AND one bag of microwave popcorn. With enough left over I could probably have done another bag of corn...

I like the richness the dark caramel gets from the Molasses and maple.
And you will note tat I don't use green apples. (scof) I had to go with Johnny Gold, because I could not find Cameo apples anywhere !?!

Popcorn Balls. 4 Carmel with syrup

Last November I posted 3 different popcorn-ball recipes.
All were the candy type verity.
This November, I bring you new popcorn ball recipes. From the Carmel verity.
Caramel Apple Popcorn balls

Caramel Apple Popcorn Balls
1 Stick soft salted Butter
1 C light Brown sugar
1/2 C light corn syrup
1/4 C sweetened condensed Milk
2 TB green apple flavor syrup. (like for Italian soda)
3 bags of popped Microwave popcorn.

Bring to Boil
Boil 2.5 minuted
Let cool slightly
Pore over popcorn
Form into Balls.

This made about 18 very large balls.


The apple flavoring is not very strong. 
I have also heard of mixing dried apple pieces into the popcorn to increase the apple flavor...

Pop corn Balls- recipe 1 Jello & marshmallows

Pop corn Balls- recipe 1:
Jello and Marshmallows

16 oz. of marshmallows
6 oz. pkg.  jello
One bag, microwave popcorn (popped)
2 Tb butter
  In microwave melt butter and marshmallow.
Once smooth, add Jello powder, stir till color is even.
In a LARGE bowl, pour the sauce over the popcorn.
Oil hands, and form into balls.

Oh Dairy Queen your crown has fallen

The Dairy Queen Blizzard is 25 years old.
I loved them as a Kid, but when I was 15 the DQ in our town shut down under some vary shoddy circumstances and so I have not been to one since.
Well, I was driving past one, and It was 92 degrees outside so I got myself a LARGE Midnight truffle, cause the kid behind the Counter said that it only had chocolate ice cream, truffle pieces and cocoa fudge. When I asked if their was wheat in it, he said no, and since he was about to make me one I trusted him.
Well let me tell you, there was something NOT GF in that Blizzard!

According to the Brochure, the Truffle pieces, the choco chunks, and the cocoa fudge are all wheat free.
Just wheat free. And they can't seam to tell me any more.
So one, or maybe all of them, are not GF!
Well DQ, I guess I won't be back for another decade or so...

Think Kit Cat bar.
Three rather unexciting wafers, alternation layers of chocolate cream, covered in a firm Dark chocolate shell.
Realy, it's just a wider, flater, indvigually wraped version of the Gultino Chocolate Wafers

.9 oz. 140 calories. So not a health bar.

GlutinO GF chocolate covered pretzls

OK, The bag cost more, and weights less then the non chocolate covered pretzels,.
But they were good.
And they must be a very new product since I could not find them on the GlutinO web sight or Amazon.
The chocolate was good milk chocolate. I
 might have preferred Dark, but that is me.
I thought the price was equivalent to the effort I would have gone to, covering them in chocolate my self.
All in all a good product, excellent for filling a bowl and setting out at any party.
Baby showers.
House warming.
Oh, I have just the bowl...

You don't have to memorize this list. They all have ONE thing in common.
Let me share the secret with you. The reason that the "dark raspberry Heart" has gluten and the regular dark raspberry candy does not, is that the Hart has a small candy decoration on it. The decoration is made up of flour, sugar and water. Same for the Candy Canes, the little person on the cane is not GF, but the candy cane is. The Easter eggs decorations, and the wreaths on the eggnog ones are all made with wheat. ALL of the things See's listed as containing gluten are decorated with Wheat. So all of the non decorated candies are Gluten free. Behind the case, is all gluten free. And sooooo Yummy! I work there. I love it all!
