Thanksgiving pies

Once again it's that time of year!

This year my sister made a pumpkin pie, gluten free, that had a brown sugar, spice and pecan crust on top.
It was lovely, and tasty

is it the moon? Adventures in bread baking

I get to present a five minute demo at this month's relief society about gluten free bread making and baking.
So I turned to my best bread recipe: Betty Hagman's lemon buttermilk bread.
I have my mother's bread machine.
It looked good coming out:

But some thing had gone very very wrong!
I have NO idea how that happened!
The bread machine is small, so only half of the dough can go in at one time, so the other helf was in the oven.

Also less then happy with results.

Conte's Pasta Gluten free

Conte's Pasta, spinach and cheese
Yummy. Good balance of filling. Good flavor
Cooked well. Not mushy or sticky or hard.
An excellent quick dinner, just toss with some grilled chicken tenders.

Pumpkin pie Brownies

Our relief society activity involved some pumpkin related snacks at the end.
It looked good, but the recipe, care of Martha Stewart, is a lot of work and not Gluten free.
So I went home and adapted it:
Brownie layer:
1 box of Gluten free brownie mix (enough to make 8X8)*
-Box called for 2 eggs, 2 Tb water and 1/2 cup butter, I replaced half of the butter with caned pumpkin
Mix well and pour into 8x8 pan, lined with parchment paper.
pumpkin pie layer
1 cup canned pumpkin
2 tablespoons gluten free baking mix**
1/2 cup milk
1/3 cup sugar
1/2 tsp pumpkin pie spice
Mix well and dolop onto the brownie in an even layer

Bake at 350 for about 45 minutes, to an hour, until the pie is firm.
Let cool, then refrigerate to finish setting. Yum Yum

*I used King Arther brownie mix
** I used arrowhead mills all purpose baking mix
