I am getting closer to 40 then I am to 20.How heavy is that.
But the way I figure it; I'm somebodies' mom.
So when Squeeker is in middle school it will not matter if his mom is in her 40s and his friends mom is only 35. I am a mom, and that, in and of its self, makes me a grown up. And grown ups are old.
So I have decided that I don't care.
Some of my friends have freaked out over the big 30, but not me.
Somewhere there is a letter that I wrote to myself when I was young, that I should open when I turn 30. I am sure I am not what I expected. But I think that is alright.
Perhaps 30 is going to be my best year yet...
As a wise woman once said "make it a great day"
And so I will.

Mi-Del Chocolate Caramel Bite-sized cookies
Noticed some new cookies at our local specialty store.

So I gave them a try. The cookies are very small. About the size of a thumb print.
They are very tasty.
They make me think of a Turtle. Chocolate, caramel, just missing the pecans.
So I wiped up some chocolate pudding and tossed a hand full of the cookies, and a hand full of Pecans.
Yummy!

Lloyds Barbeque company Gluten free
Lloyd's Barbeque company Tubs of seasoned shredded meat are Gluten free.
Right at the bottom of the ingredients listing in bold print.
It's not hard to find barbecue sauce that is gluten free, if you are looking, but you can't just grab ANY sauce off the shelf, you have to look.
So it is super convenient that the sauce and meat are ready to go. The Tub is microwavable. So this is a great lunch for hot summer days. You don't heat up the kitchen. Some fresh fruit, salad, and pulled port sandwiches. Yum

Udi's hamburger buns
For the lunch between the wedding ceremony and reception, my brother wanted those BIG Hogie sandwiches. And since 3+ members of the wedding party are Gluten free, we needed another option.
I was sent by my mother to pick up gluten free hogie rolls. As far as I can tell. no such thing exists.
However, Udi's makes gluten free "hamburger buns"
And they are yummy.
Kind of small for the hamburger's I'm use to. But the bread quality is good. they hold up nicely to any kind of hand held addition.

Chocolate cake Recipe and observations
In four of my Gluten free cookbooks I have a recipe for chocolate cake that uses no "flour"
All four of the versions are basically the same.
So here is a compilation recipe:
.5 Cup cocoa
.5 Cup boiling water
1 Cup cornstarch
1.5 Cup potato starch
4.5 tsp baking powder
1 tsp salt
1 Cup sugar
2 eggs
.5 Cup oil
2.5 tsp gum (x or guar)
1 Cup vanilla soy milk
-All the recipes agree that you must mix well.
Mix coco with water. Then Mix everything else in.
So, I made some cupcakes with the recipe.
The batter rose nicly, but the end result was: Sadly disappointed.
The cupcakes are dry, dense, porous, and not tasty.
SO I made a batch from of my favorite brownie recipe* and pored that into the cupcake papers.
